EU is the largest producer of olive oil at global level, accounting for 69% of world production. Realizing that organic food market has a strong potential, many olives farmers have been switching to organic farming, which is better in terms of quality and environmental sustainability.

Unfortunately there is a lack of staff and funding. Farmers and producers need support in the three years transition period to organic production and a training. The knowledge and competences they need are how to maintain and renew the old olive groves, master organic production techniques/treatments to fight most dangerous diseases, develop new plantation with more productive varieties, strengthen the processing and innovate with new organic products, better promote traditional products, and valorize the important natural and cultural heritage associated with the olive groves through touristic activities.
